Quick Vegetable Medley with Cottage Cheese

Enjoy this delicious cottage cheese and vegetable medley along with some rice or naan/roti.

Ingredients

  • Medium carrot (1)

  • Capsicum (1)

  • Beans (handful)

  • Medium onion (1)

  • Ginger (½ inch)

  • Cottage cheese (150 g)

  • Olive oil (a drizzle)

  • Garam masala (¼ tsp)

  • Coriander leaves

  • Cumin seeds

  • Dried red chili (1)

  • Coriander powder (1 tsp)

  • Turmeric powder (½ tsp)

  • Cumin powder (1 tsp)

  • Black pepper powder (¼ tsp)

  • *OPTIONAL* Green chili (1)

Preparation

Step 1:

In a medium saucepan on medium heat, drizzle some oil and wait till it gets hot. Add a couple of cumin seeds and a dried red chili (broken in half) and fry for 1 min. Once done, add chopped onion and toss until slightly brown. Then add chopped carrots, beans, and capsicum and mix for 30 seconds.

Step 2:

After mixing, add coriander powder, turmeric powder, cumin powder, pepper powder, and green chili. Toss until vegetables are half cooked.

Step 3:

Cut the cottage cheese into small pieces and add it to the pan with the vegetables. Add some garam masala and cook the dish until it’s completely done.

Step 4:

Season the vegetable and cottage cheese mix with fresh coriander leaves and serve it with parathas/rice. Enjoy!
